• 1 tbsp. extra-virgin olive oil
Instructions
• Start by pre-heating the oven at 325 degrees Fahrenheit. You will need to spray the baking dish with some cooking spray, then put it aside
• Heat the oil at medium heat
• Then add bell pepper and onion, cook until it’s soft, around 5 minutes.
• You can add garlic, cook an additional minute until it’s fragrant. This is when you can add Ro-Tel and soups, then stir it properly.
• You can season with some pepper, chili powder salt, and cumin. Remove it from the heat.
• Layer around 6 tortillas in the baking dish and overlap as needed. Spread around 1/3 of the sauce over the tortilla, and then tip with ½ the chicken and 1/3 of the cheese. Repeat these layers and end with 6 tortillas in total, cheese and sauce.
• You can bake until the tortilla and chicken are warmed through and your cheese is starting to melt. The baking process takes 30 minutes.
• Use some cilantro to garnish before you serve the King Ranch Chicken.
